Bowtie Pesto Pasta (serves 4 to 6)

  • 1 cup grated Parmesan cheese
  • 1 cup olive oil
  • 1/2 cup pine nuts
  • 1 teaspoon chopped garlic
  • 4 tablespoons basil
  • 2 quarter bowtie pasta
  • 1 cup provolone cheese, cubed
  • 2 tomatoes, chopped

Instructions:
Use a food processor to mix together Parmesan cheese, olive oil, pine nuts, garlic and basil. Cook pasta in a large pot of boiling, salted water, according to package directions. Drain. Mix together pesto sauce, pasta , cubed cheese and chopped tomatoes.
